A Diet of Delight

Living in an age in which we are saturated with information from every angle, society at large is more health conscious than ever. With the popularity of organic foods, farmer markets, and gluten-free, paleo, raw and vegan diets, specialized eating habits are more common than ever before. But sometimes the easy accessibility to information and limited time to devote to research and time-consuming recipes can be overwhelming.

That's why we love to look to KiraGrace Warrior Alum Chelsie DiPaolo for our favorite food tips. She has an amazing knack for creating recipes that are not only good for you, they're simple and absolutely delicious! We love her approach to food. She says, "There is this huge misconception that healthy food must be lacking in something because what tastes good must be bad for us, right?! ... I’m Italian, I like good food and I can assure you, when I cook, there is nothing lacking."  Here are our five favorite summer recipes of hers that are incredibly healthy and delicious, and can cater to all your eating needs, no matter what you practice. 1. Oats

Jammed packed with proteins, nutrients, and anti-inflammatory components, this low-glycemic grain is amazing, and we recommend it as a staple item for your pantry. Here is Chelsie's tasty recipe for morning oats:  Chocolate PB & Cocount Oats and Overnight Oats

2. Soft Serve Ice Cream

It's not summer without ice cream! But with all the dairy, sugar, and chemical additives in most ice cream brands, it can be hard on your system. And a lot of times non-dairy options aren't much better and they definitely don't taste as good. But Chelsie has found an incredible way to make this treat without compromising the taste. Here is her crazy delicious recipe for Banana Soft Serve.

3. Burgers

These long summer days beckon for evenings around the grill! We all know the damage a typical big juicy burger can do to you, but they're too good to completely cut out! Here's a great makeover to summer burgers that we are in love with: Homemade Veggie Burgers

4. Vegan Caprese Salad

There couldn't be a more perfect summer appetizer than Caprese Salad. Check out this yummy, guilt-free take to the classic Italian dish:  Vegan Caprese Salad

5. Green Smoothie

We know, we know, everyone has jumped on the green smoothie bandwagon, but it’s crucial to get your greens in every single day and this is an easy way to do it. It’s the perfect start to your day or a refreshing afternoon snack, and you have the flexibility to make it your very own. Switch up your greens, add more fruit or less depending on your sweet tooth.
