No matter your faith or traditions, at the root of the Easter holiday lies a call for each and every one of us. This celebration is a summons to transformation and new life. What does this mean really? Transformation is an easy word to toss around, but it is no easy task and most likely will not leave you feeling all warm and fuzzy. New life demands the sacrifice of the old. Transformation requires hunting down all the nooks and crannies within the heart that are hidden and locked up, and ushering them into the light. It means turning away from the tormenting voices of fear, pride, addiction, envy, unforgiveness - anything that does not give you life - and learning how to retrain the ear to listen to the voice of love. Easter comes with the spring, reminding us that it is never foolish to hope that flowers will grow in the places that have seen the rain. We wish you warriors a beautiful life of unwavering hope, and newfound life and love.

FOR THE CREPES:
- 1 1/2 cups plain, unsweetened almond milk
- 1/2 cup water
- 3/4 cup Bob Mills All Purpose Gluten-Free Flour (or sub any other flour)
- 1/3 cup Chickpea Flour
- 2 teaspoons coconut oil, grapeseed oil or olive oil
- 1/2 teaspoon sea salt
- 1-2 Tbsp coconut palm sugar (or sub Turbinado Sugar or Organic Cane Sugar)
DIRECTIONS:
In a blender, pulse all the ingredients together until smooth. Cover and chill in the refrigerator for at least an hour or over night.
When ready to cook, heat a non-stick pan to medium-high heat. The skillet is ready when a few drops of water flicked onto the pan sizzle immediately. Spray the pan with cooking oil and ladle about 1/4 cup of batter into the pan. As the batter starts to sizzle immediately, tilt the pan in a circular motion to help spread a thin layer of batter to the edges of your pan. Your first crepe wonât be the best⦠but as you practice, it will get better J
Bake the crepe until the top looks dry and the edges appear firm. Gently run the spatula along the edges and underneath the crepe to loosen in. Peek under, if itâs golden with a few light brown spots, flip it. It should only need about 30-45 second on the other side.
Stack your cooked crepes on a plate one on top of another, covered with a towel, to keep crepes warm while you finish cooking and prepare to eat!
FOR THE STUFFING:
The options for your crepe stuffing are endless! Listed below are my three favorite combinations⦠try one, all 3 or make up your own! You really canât go wrong. I love to prepare all the toppings and put them on the table and let my family mix and match and create their own. An interactive breakfast experience that canât be beat!
Fresh Berries (Choose from Strawberries, Blueberries, Blackberries and/or Raspberries) -folded up inside
Toasted Pecans - sprinkled on top
Coconut Flakes (unsweetened)- sprinkled on top
Coconut Maple Syrup (equal parts Coconut Manna and Real Maple Syrup) - drizzled in and over the whole thing
-side note: if you have never had Coconut Manna youâre in for a treatâ¦. think heaven, in the form of a coconut, beautifully placed in a jar for your enjoyment!
A little dash of cinnamon sugar
1 Tbsp Justinâs Brand Chocolate Hazelnut Butter (like Nutella but without the dairy) - spread on the inside of your warm crepe
1 banana - sliced and folded up inside
Coconut Flakes (unsweetened)- sprinkled on top
Toasted Walnuts - sprinkled on top
Real Maple Syrup - just a drizzle
And for a fresher take⦠try:
Fruit of your choice: Sliced apples, fresh grapes, clementine slices, peaches, banana slices, etc.- folded up inside
Dairy free yogurt (my favorite is SoDelicious Brand - Coconut or Almond Milk Varieties) - slathered on top
Toasted nuts (slivered almonds are a great option or even a little Homemade Granola) - sprinkled on top
Cinnamon Sugar - just a touch, sprinkled on top
Simple berry syrup recipe (1-2 cups fresh or frozen berries, cooked down on the stove top with 1-2 Tbsp maple syrup, a splash of vanilla, a dash of cinnamon and a dash of sea salt) - drizzled over the whole thing
